People seem to use .300 for the wrong reasons as it's really just a compromise.
Gunpowder needs a certain amount of barrel volume to fully burn, and when the volume is a constant the only option for a shorter barrel is a larger bore. With an 8 inch 5.56 you have very little power as most of it is just flame and sound while a .300 although still loud and flamey, will get you more power from that barrel length.
The peak barrel length for a .300 or 7.62 will naturally be lower than a smaller bore caliber so when you decide on a shorter barrel you're at less of a disadvantage than you'd normally be. This is why all the big bore AR calibers were developed, but they never really stuck around since mag capacity went below half of normal.
I think that .350 legend is probably the better version of .300 Blackout as you don't lose capacity yet you have a large bore diameter. It's also very powerful and would actually be an improvement over 7.62 when it comes to stuff the .300 is thought to be good at. There's no good subsonic ammo for it as they're all about the same grainage as .300, but with a twist rate used for .300 instead of the standard 1:16 you'd likely be able to sling 300-450 grain slugs, developing a good deal more power and penetration.

I've got a 300blk AR pistol I've been thinking about trading to free up a slot in the safe. I've only shot subsonics through it. Suppresses nicely, but with subs, you basically end up the energy of a pistol round (220gr @ 900fps-ish). Main difference with subs is the bullet has a better ballistic coefficient so it flies better than a 45 ACP. Was fun at first, but it's turned into a safe queen.
You might try some 125gr (+/-) stuff for the higher velocity? Don't know if it would bring enough extra velo to punch through a rim though.
